Crush the berries in the shaker. Tear the 3 fresh basil leaves. Add the sugar syrup, lemon juice, Calvados and fill with ice cubes. Shake for ten seconds, filter and serve in a cocktail glass. Top with sparkling water and fresh basil.
In a shaker filled with ice, incorporate all the ingredients. Shake vigorously. Using a colander, pour into a sherry-type stemmed glass. Garnish with a coffee bean.
This cocktail will be shaked once with the ice cubes, then once without, in order to raise the egg white and give the desired velvety side. Filter and serve in a bowl.
